Bitter Gourd Thoran
Ingredients
- 2 bitter gourds
- 200 ml coconut oil
- 1 tsp mustard seeds
- 2 chopped onions
- 2 cloves garlic, chopped
- 5-10 spring curry leaves
- 1 tsp turmeric powder
- Salt to taste
- 200g grated coconut
Preparation
- Boil the bitter gourd until it is tender.
- Heat the oil in a pan and fry the mustard seeds until they pop. Add garlic, onions and curry leaves and sauté well until it is soft.
- Add turmeric and the sliced boiled bitter gourd. Salt to taste and fry everything for a few minutes.
- Mix the grated coconut into the pan and serve the dish warm.
