Snake Gourd Curry

  1. 1. Boil the snake gourd, cut it in pieces and keep it aside.
  2. Heat the oil and add cardamom, cloves, cinnamon, cumin, crushed garlic and onions and sauté until you smell the aroma of the spices.
  3. Add the ginger garlic paste and the tomato puree and season with turmeric, chili, coriander and salt.
  4. Now add the cashew paste and the vegetable stock to increase liquidity.
  5. After adding the boiled snake gourd, let the mixture thicken for a few minutes.
  6. Garnish with fresh coriander and serve hot.
