Snake Gourd Curry
Ingredients
- 400 g snake gourd
- 100 ml coconut oil
- 1 tsp whole cardamom
- 2 tsp cloves
- 1 cinnamon stick
- 1 tsp cumin seeds
- 2 cloves garlic, chopped
- 1 tbs ginger garlic paste
- 100 ml tomato puree
- 1 tsp turmeric powder
- 1 tsp chili powder
- 1 tsp coriander powder
- Salt to taste
- 1 tbs cashew paste
- 50 ml vegetable stock
- 50 g fresh coriander
Preparation
- 1. Boil the snake gourd, cut it in pieces and keep it aside.
- Heat the oil and add cardamom, cloves, cinnamon, cumin, crushed garlic and onions and sauté until you smell the aroma of the spices.
- Add the ginger garlic paste and the tomato puree and season with turmeric, chili, coriander and salt.
- Now add the cashew paste and the vegetable stock to increase liquidity.
- After adding the boiled snake gourd, let the mixture thicken for a few minutes.
- Garnish with fresh coriander and serve hot.
