½ cup yellow lentils
½ tsp cumin
½ tsp grated ginger
1 small chili (seeded, chopped)
Juice of ½ lemon
Rinse lentils and cook with 2 cups of water for 20 minutes.
In a pan, roast cumin, ginger, and chili briefly.
Add to lentils and season with lemon juice.
Serve warm – garnish with herbs if desired.
