Watermelon Curry
Ingredients
- 100 ml coconut oil
- 1 tsp cumin seeds
- 2 cloves garlic, chopped
- 400 g onion, chopped
- 2 tsp ginger garlic paste
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp chili powder
- 500 ml tomato puree
- 4 tsp cashew paste
- 100 ml watermelon puree
- 1 tsp cumin powder
- Salt to taste
- 800 g watermelon, diced
- 50 g fresh coriander
Preparation
- 1. Heat the oil in a pan and let the cumin seeds fry until they start popping. Add garlic and onions and sauté well until the vegetables are soft.
- 2. Add the ginger garlic paste, turmeric, coriander and chili powder. Once you smell the aroma of the spices, add the fresh tomato puree (blended tomatoes) and the cashew paste. Let everything fry for a few minutes.
- Add the watermelon juice and season with salt and cumin powder. Let everything thicken for a while.
- Now add the watermelon cubes and warm them for a few moments. Then garnish with fresh coriander and serve with rice.
